They would agree with you but the whole point of these stunts is to challenge the law. To do so, they have to have standing which means operating as a religious organization including not paying taxes.

Religious institutions (regardless of whatever shadiness they deal in) are non-profits, so makes no sense to tax them if you can't define profits within their operations.
It's like wanting to tax charities, all legitimate institutions pay to the government in one way or the other anyways, be it payroll tax, state and federal contributions, fees for operational licenses, etc, so even religious institutions still pay some kind of money to the government.
