He could have only had one drink but who knows what other shit he was on. That's the bad deal on bartenders sometimes, you're not a doc and so you're watching body language, slurring, etc. But I think many bartenders serving only one drink wouldn't know if the dude was on some shit.

On the flip side, the bartender is probably worried they'll get sacked and might have lied and over served him/ didn't realize he was already under the influence and trying to save their ass. I've known too many bartenders that see a celeb and give them whatever in hopes of a big tip.
