That's totally understandable, the franchise has a lot of entries now. For a starting point I'd recommend playing Yakuza 0 first. It's an incredible game, with a great story and lots of people started out with it. It's an 80ies prequel for the main character of the Series, Kazuma Kiryu and another recurring character Goro Majima. So you get to switch between the two characters throughout the game, the mini games and substories are fun(and great comedic relief for when the main story gets too bleak) and the fighting styles have a lot of variety and are pretty easy to pick up. I bought the game a few years ago for about 5€ and I got hooked immediately. I'd say it's also possible to jump into the series with Yakuza 7 though, as you don't need to know any of the other games or previous main characters (even though some of them have cameos in the game) to get into it because it's got an entirely new cast of characters. It is currently the only game that has turn based combat, if you have any preferences when it comes to beat em ups vs turn based.

I do have Hellblade on my Playstation and on Steam(both gifted) and I've started it once and then got distracted by another release but I keep meaning to pick it back up because I know I'll love it. I've heard it's pretty short so I've got no excuse, heh.
