Soups are a favorite cooking project of Steve and I, especially since it's pretty easy to make soups gluten-free. Also, Steve is a soup master, possibly due to his living in amazingly cold climates! This weekend, while deciding on a good soup, we lamented the fact that our recipes had a few 'soups with bacon' but no good 'bacon soups'. To the google! I figured a good bacon soup would need to use the drippings from the bacon, and so eliminated any recipe I found that had you just add chunks of pre-made bacon. I stumbled upon a good amount of recipes from www.grouprecipes.com, including one for creamy tomato bacon soup. This recipe is amazing! We made a couple adjustments for the gluten-free-ness and to add a bit more of a kick. The best parts? It takes only about an hour and you can make it in a single pot! I guess the only downside is you can't crockpot it.
Ingredients
1 small onion, chopped
1/2 package of bacon
1 1/2 tbsp cornstarch
2 tsp sugar
1 tsp salt
1 (heaping) tsp pepper
dash garlic powder
dash oregano
dash basil
2 cans chopped tomatoes with juice
2 cups milk
1 cup mushrooms, chopped
Brown the onions and bacon in a large pot. Add cornstarch, sugar, salt, and seasonings. Stir in tomatoes and bring to a boil. Boil for 1 minute, then remove from heat. Cool until lukewarm. Stir in milk and mushrooms. Put back on heat until the whole thing is the perfect temperature for eating!
I've been eating leftovers for the past 2 days, and it's just as delightful reheated. Enjoy!
