I'm jealous! I didn't get to Hatch when I was in New Mexico.

If it's any consolation, the festival in Hatch, NM isn't until Labor Day weekend.

In general, chile peppers freeze beautifully. At any given time, a good chunk of our freezer space is devoted to whole and chopped peppers, the latter frozen in ice cube trays and turned into freezer bags after they're solid.
