Trying a New Meal Plan

Now that school has started my days are very long. I leave the house just before 7 am, M-F, and 2 days a week I work until 7 pm, the other 3 days I work until 5 pm and on Saturday I work from 10-3. As much as I love my crock pot, it's just too much effort to make meals every morning and because there's only two of us, most things are pretty cooked to death after 10-12 hours on low.

I'm going to try to make up small meals on the weekend that I can freeze and just pop in the microwave in the evenings. If that doesn't work, I'm going to go back to my Weippe dinners of cold cereal, popcorn, or peanut butter sandwiches. As long as I add a salad and/or some fresh fruit, it's not that unhealthy. Or at least it's healthier than a diet of fast food take out.
