Over the weekend, I built a tandoor.

In retrospect, I probably overengineered it.  It’s a heavy, rolling clay oven that I likely could’ve accomplished almost as well with a Weber kettle and a little cleverness.  But still, having a nice, big, bespoke “oven” for making ( Read more... )

Agar.

What a lovely substance.

I've read of both the gelling and clarifying properties of Agar, so I wished to try it for myself - to make "consommes" out of things that normally wouldn't consomme, namely vegetables.

I bought some Agar yesterday.

I also intend to buy some lecithin.

Yes, I'm experimenting with hydrocolloids.  I certainly intend to use the agar to do clarifications.

I still haven't made the plunge into sodium alginate/calcium chloride spherification, although it sounds fun/

Now, I wonder where I can get liquid nitrogen...
