One recipe I don't play with is a friend's grandfather's fruitcake recipe. Difficult to improve on near perfection.
I use a 6 inch diameter deep cake tin.
Granddad's Vegan Fruit Cake
8 oz self raising flour
3 1/2 oz sugar
3 oz fat (Trex or vegan marg)
1/4 pt water
1 teaspoon cinnamon
1/2 teaspoon mixed spice
1/4 teaspoon salt
1/2 teaspoon bicarbonate of soda
8 oz dried fruit (including vegan cherries)
{1/4 and 1/2 means one quarter and one half respectively}
Put the sugar, fat and water into a saucepan and bring to the boil.
Sift the flour, spices,salt and bicarbonate of soda into a basin and add dried fruit.
Pour in the cooled boiled ingredients (now lukewarm). Stir to mix.
Turn into a cake tin and bake for 1 to 1 1/4 hours in a moderate oven e.g. Regulo Mark 4 or 365 F (180C)
