Not surprisingly, my answer comes down to "Do as thou wilt," although I think a very reasoned one.

There is benefit to doing the correspondences exactly the way they were originally. Even though earth was considered cold and in the north because the tradition started at the south foot of a mountain, and you live just south of a desert, there is value in echoing back the original starting place.

There is benefit to changing the correspondences to the local area. If you live on the edge of the east coast, you're probably going to be much more effective if you face the ocean to call water than trying to force another set of correspondences on it.

Finally, it can be of much benefit to use a system that makes perfect sense to you, e.g. the "13 Reasons why Air is in the North" essay, or my habit of starting facing the altar regardless of where it is placed, so the first and last gesture begins and ends with me "in place" for everything else.

All of them have benefits, none of them really have much in the way of drawbacks. Barring a really good reason, like training younglings in a tradition and trying to pass on it's way, I say do as you please.
