I just chopped up the onions, garlic, bell pepper, celery and green onion smoked sausage and threw it all in the crockpot with a pound of red beans and some Tony Chachere's, and a couple of bay leaves. The game starts at 6:30...if ya wanna.

I used a regular sized crock pot, small bag o'beans, one onion, one green bell pepper, 6 cloves of garlic, 3 celery stalks, 2 bay leaves and a lb. of smoked meat (or liquid smoke if ya wanna go veggie) I added the Tony's and some other creole italian blend in my cabinet. 9 hours later- The house was REEKING when I got home from work, in a really wonderful way. I added some more Tony's and a dozen or so shakes of some Crystal hot sauce. Brown Rice and a tossed salad rounded out the meal.

OH!! I left out one part.
I like to take out about 2 cups worth of the beans and mash them up, or use a blender/wand-type-hand-mixer to pulverize them into a thickener and pore it back in and mix it up, just to give it a thicker texture.
