This week in cooking with N&N:
Mushroom & Bacon Cream Sauce - Jamie Oliver, Ministry of Food - 20 minutes - Serves 4 (we got 2)
onions, portobello mushrooms, chilli pepper, smoked bacon, creme fraiche
Really quick, really easy, really good. Cut the bacon and fry. Add the chilli peppers, onions, and mushrooms. Add the creme fraiche. Salt and pepper to taste (it didn't need any). We poured it over pasta shells (the shells took longer to cook than the sauce, prep time and everything).
It was _delicious_. Both Chris and I licked our bowls clean when we were done. The peppers and the salty smokiness of the bacon was perfect in the cream. Next time I want it over rice. We were originally going to serve it with chicken but I'm glad I didn't - it was perfect on it's own. Mind you, it might actually serve 4 if you serve it with more food.
Pot Roast Meatloaf - Jamie Oliver, Ministry of Food - 1hr - serves 6
too much to list
Fry the onions in spices, set aside in a bowl. When cool, add cracker crumbs, mustard, herbs, ground beef, and an egg. Shape and place in oven in a casserole dish. Fry another onion with garlic, add tomatoes, chickpeas and pepper. Simmer. When the meatloaf is done, pour the grease over rosemary leaves, and spoon the sauce around the meatloaf, cover with pancetta, "sprinkle" over the rosemary and bung it back in the oven for a bit.
Good, but not amazing. I was surprised at how well the chickpeas worked with the meatloaf but by the end of my serving (Chris served so it was more food than I would normally eat but good enough that I ate it anyway - not that clearing my plate has ever been a failing of mine) I was less thrilled with them. When I do it again I think I'll put rosemary and garlic in the meatloaf itself. Much too good for Meatloaf Sandwiches.
Cream of Tomato Soup - Epicurious - <1hr - a lot
Tomatoes, onions, garlic, broth, cream, cloves, veggie broth, half&half, tomato paste, flour, sugar
Fry the onions in butter and olive oil (I used garlic flavoured because I can), add garlic then flour. Add tomatoes, tomato paste, broth, and sugar. Simmer. Puree and add half&half (they don't sell H&H in the UK so we make our own using 50% single cream and 50% whole milk).
It was good but not as sweet/creamy as I'm used to with store-bought cream-based soups. This isn't a bad thing, mind. I was a little reluctant to put any sugar in at all. Next time I might try not adding sugar and add a pinch to my personal taste like I do with salt&pepper. This was our first cream based soup :o) I guess they're not as popular in the UK?
