Adventures in Cauliflower

So far I have succeeded in at least Goal #2 from a mere day ago. My dinner was a dish with cauliflower, onions, bulgar, and pasta. It was tasty enough, but the bulgar/pasta combo didn't thrill me. If I make the dish again, I will leave one of those items out. I ended up with two helpings of leftovers, so that gives me at least two more vegetable-laden meals, one of which will be today's lunch.

My breakfast today will be oatmeal with fruit, which I made last night. The recipe called for a couple tablespoons of brown sugar, but I reduced that to a mere sprinkling, since I figured the fruit would add plenty of fructose already. I think this will be one good way to include fruit in my diet; I've cooked oatmeal enough that I'm confident and I know how I like it, and I can throw in whatever fruit bits I happen to have.

Not sure yet what dinner tonight will be... But I'm stopping by the store after work to get some cool ingredients that I've never used before. I'll be doing some experimenting this weekend!
