We're not moving to Portland this summer, but Eugene (hopefully), which is a few hours south. The architecture program at U of Oregon allows students to transfer to a special urban architecture program in Portland after they've reached a certain level. Eugene is an awesome city also, but I just ran into a couple of articles about Portland, so I'll talk about Portland first.
Reason 1: Portland is a great city to ride a bike.
Here is an article about a measure that the city of Portland, OR is taking to protect cyclists. I'm pretty sure that Portland is one of the best cities in the country, if not the world, especially for cyclists.

Normally I wouldn't link to PETA, but they're actually right about this one.
PETA says Portland is the best veg-friendly city in North America, and they've got a great article about it.
There are TONS of vegetarian and vegan restaurants, even vegan doughnuts.
There was a vegan pirate-themed restaurant, but now it's turning into a vegan strip club (
I'm not joking).
Also, a vegan bike shop!
