So for Father's Day on Sunday, I was going to make blueberry crumb cup pies, but then my sister was like, only you and Daddy like blueberry pie (which, what? I DO NOT UNDERSTAND), so it seemed like a bad idea to make a dozen of them if no one else was going to eat them, and anyway, it is frustratingly difficult to roll out pie crust on a cutting board over the sink. (Remind me to talk about COUNTER SPACE and how it's the second most important thing I'm looking for in this whole ridiculous condo shopping expedition that may eventually happen live and in person rather than on the internet, because the lawyer predicts the sale of the house will be completed on or before June 30, but that is a whole long post by itself, I think.) Still, though, CUP PIES are a thing I want to have in my back pocket, metaphorically speaking.

Anyway! The thing is, I have to do it on Saturday and carry it out to the island with me on Sunday, which means I need something that can take 2.5 hours of commuting, and then another 40 minutes in the car from my brother's to my sister's. I can wrap it tight and pack it with fake ice (and the AC on the LIRR is usually turned up pretty high), but I'm thinking ice cream is pretty much out of the question, especially since Sunday is supposed to be hot, as well.

So in terms of things I've already made, there's the mini cheesecakes (pic), the black and white pudding pie (pics), or the no bake chocolate Kahlua cream pie (pic). (I thought about the raspberry lemon bars, but I've made them before for my dad and he didn't really like the texture, so anything of that sort is out, I guess.)

Otoh, I've got a strawberry shortcake cheesecake recipe that sounds AMAZING, these cheesecake cupcakes, which seem like a richer version of the ones I've made before, or, because there always needs to be a ridiculous chocolate option, bad day bars.

Mainly, I want something easy, shareable, and tasty, that you could take to and serve at a barbecue (also, nut-free, since one of my nieces has a nut allergy). Not having to use the oven much would also be nice, but not necessary. Suggestions are welcome!
