Grilled tofu topped with BBQ sauce with cole slaw (cabbage, grated carrots, grated sweet onion, vegenaise, salt, natural sugar) and toasted pine nut & chive couscous.
I forgot to make something sweet for our anniversary, so I whipped up some chocolate sauce to put on fresh strawberries and blueberries. The chocolate sauce was made with soy creamer, earth balance margarine, chocolate chips (made in a double boiler) and once cooled a bit, vanilla extract swirled in. So good!
