Ah! There is nothing like a big bowl of berries to make you smile. The strawberries and blueberries were probably some of the best I have ever had. The raspberries and blackberries were good, but a bit tart. I lightly glazed this berry mixture with some agave nectar.
I know there is a lot of green on this plate but it was purely accidental. The stir fry had cashews, bok choy, zucchini, broccoli, onions, red and yellow bell peppers with a sauce made up of apple juice, soy sauce, grated garlic and grated ginger, natural sugar, chili oil and sesame oil.
Earlier in the day I made some pickles. The cucumbers were sliced super thin and marinated in the fridge w/ rice wine vinegar, salt and natural sugar. (The vinegar, sugar and salt mixture was slightly heat on the stove with a crushed garlic clove and poured over the cucumbers.) If you have never made yr own pickles, try it. They are super easy and are a great snack or a pretty side as I have done with this stir fry.
