Fresh baked bread in the back, an English cucumber, red and yellow bell peppers, red onion, lemons and limes, zucchini, strawberries, raspberries, blackberries and blueberries. They are hard to see but I also got some dried apples and dried banana chips for granola. Yesterday I had a fantastic salad that had all the berries listed and now I am going to recreate it!
Bok choy, tomatoes, green onions, more lemons and limes, radishes, bananas, carrots, green beans and baby spring mix. Oh My! This week I am going to make Maple Mustard glazed yukon gold potatoes (not pictured) with green beans, out of Vegan with a Vengeance.
Last but not least, fresh parsley and fresh basil. These are 2 of my favorite herbs. The basil tastes great in pasta and thai dishes and the parsley taste good in everything. The bulk of the parsley will be used to make this homemade Chimichurri sauce my friend Carlos' grandma taught me to make. Typically this sauce is for grilled meat, but since we don't eat meat, it will go on veggies and toasted bread. Yum!
