okay, got inspired . . . made some granola. here's the sort of recipe, if you wanna try it.
2 tbsp earth balance margarine
4 tbsp pure maple syrup
2 tbsp light agave nectar
approximately 1 cup rolled oats
sprinkle of sesame seeds
handful of hazelnuts chopped
half a handful of pecans chopped
pinch of kosher salt
melt margarine, maple syrup and agave nectar together (do not boil). i preheated my oven to the lowest setting, since it wants to burn everything. in a big bowl, mix together the oats, sesame seeds, hazelnuts, pecans and salt. once the margarine, maple syrup and agave are melted together, pour on top of the oat/nut mixture and stir entire mixture until everything is combined well.
on a cookie sheet (one w/ a rim) covered w/ parchment paper, spread mixture on a single layer. here's were it gets kinda guess work. i watched the mixture in the oven to make sure it didn't get burnt. i took it out a couple times and stirred it, as to evenly toast it.
I would say it was in the oven about 10-15 minutes, or until it looked toasted enough. the nuts and oats should not get too brown, but will look toastier than when put in the oven. point is it shouldn't be wet.
it turned out really well. i may throw in some dried cranberries or just leave as is. use for snacking or pour soymilk on it for breakfast.
you can of course use whatever nuts or dried fruit you like.
