Spaghetti and garlic chicken with tomatoes Originally uploaded by

Get 200 grams of chicken thigh, six to eight cherry tomatoes (halved), a couple of cloves of garlic (chopped) and spaghetti.
Sprinkle a little salt on the chicken and pat it between paper towels. Start the spaghetti. Then, put a bit of oil on a frying pan and put in the chicken, skin side down. Let it cook, covered for about five minutes. Then flip it over and cook another three. Remove from the pan and set aside. Pour any remaining oil/juice into a measuring cup and save it for later.
Wipe the pan clean with a paper towel and put in two tablespoons of olive oil. Heat it over a medium flame and add the chopped garlic. Let it brown, and then add the tomatoes. Before you drain the spaghetti, pour water from the spaghetti pot into the aforementioned measuring cup until you have a half cup of liquid. Add that to the pan. Stir it all up a bit, let it simmer, and then turn off the heat.
The chicken should have cooled a little, so cut it into bite-sized pieces. Add it and the cooked spaghetti to the frying pan. Turn the heat back on low and stir the whole thing up for a few minutes.
Serve garnished with aojiso (green perilla), torn into tiny pieces from which the stems have been removed.
Note - I used linguine rather than spaghetti. Still damn good.
