Here's what you need:
2 frozen fish fillets thawed
1 ear of corn
Some green veggies (celery, cucumber, bell pepper, salad greens, or a combo of some or all of these)
Some red or yellow veggies (optional)
Avocado (optional)
Salt
Pepper
Olive Oil
Lime Juice
Hot Sauce (I use red tabasco)
Here's what I do:
Come home and turn on the oven to preheat to 400F.
Brush olive oil on a non-stick back sheet
Place fillets on sheet
Sprinkle fillets with salt, pepper, olive oil, and lime juice
Slice corn off cob
Chop the veggies & avocado if using
Toss corn and veggies with some salt, pepper, lime juice and hot sauce
When the oven comes to temp bake the fillets for 10 minutes (longer if you're super worried about rare fish)
Plate and eat
The whole meal takes about 30 minutes to make. It's easy, active, satisfying and doesn't make a ton of dishes.
