What a happy life
Cake of a week ago was a success (we celebrated iterinfinitum's birthday with it), and the cake I made this weekend (same coconut cake) also turned out, this time for Baby Benjamin's Baptism Bash.
I have to say, though, that the merigue icing defeated me this time around. It turned out perfectly fluffy and lovely the week before, but when I made it this weekend, it kept spoiling from over-beating. What a waste. After doing two batches (a double and a single), I gave up and made lime buttercream icing, which turned out perfectly.
This was all accomplished at about 4:00am, so I was an exhausted lump on Sunday. Happy, but exhausted.
Next event: Wine and Cheese and Cheese! I am excited and looking forward to the first play of "What?" the party game.
