So today was my first attempt at making homemade applesauce. It turned out well, I used a mix of Golden Delicious, Gala, Crispin and Granny Smith. (I think the Crispin was in a bit worse shape than I'd thought, but all in all, a decent batch) I think next time I'll stick with a Golden Delicious and Gala mix, maybe throw in a Honeycrisp or two. It was a small batch, I only used 4 apples total, one of each type listed. Once I get better at it, I'll try larger batches. Maybe draft the slow cooker into the process, that way I can just let it slowly stew for a few hours without having to watch the stove.

I also plan on attempting to make my own vanilla extract. I don't really bake as much as I used to but I'm curious to try making my own anyway. If it turns out well I'll inflict it...er...gift it out to family, perhaps. (though the glass jars I want to use...oof...the shipping is as much as the order I'm placing but eh, glass is heavy, and I'd rather use glass than plastic)

Edit to add: Upon further tasting, I may have to consider this batch of applesauce a dud, there's just an off kind of flavour that is not appealing. Ah well, live and learn, and try again!
