Autumn Cookies

Tuesday was the first day of Autumn, and I felt this huge urge to bake with pumpkin. I went to the local grocery store, and bought some easy Pumpkin Pie Mix.. And then made cookies with it to celebrate.

Autumn Cookies

4 tbsp Butter (softened)
3/4 C Vegetable oil
1/2 C White sugar
1/2 C Brown sugar
1 Egg
1 tsp Vanilla extract
1 1/4 C Easy pumpkin puree mix
3 1/2 C All-purpose flour
1/2 tsp Salt
1 tsp Baking powder
1 tsp Baking soda
Candy Corn

★ Preheat oven to 350 F. Cream together butter, oil, and sugars. Add in the egg, vanilla, and pumpkin and mix until combined.

★ Add the flour, salt, baking powder, and baking soda. Mix until completely combined. Stick in the refrigerator for about 10-15 minutes to firm up the dough.

★ Using a small scoop or hands, roll dough into large teaspoon sized balls and roll each in a small bowl of sugar.

★ Place sugar-rolled dough balls on a cookie sheet lined with aluminum foil and bake for 12 minutes. After pulling out of the oven, stick a candy corn in the center of each cookie. Allow to cool, and enjoy!
