Sicilian winter salad

Tonight's food porn: "A popular Sicilian winter salad is made with sliced Tarocco oranges, sliced bulb fennel, parsley and olive oil."

Sicilian winter salad

2 smallish bulbs of fennel, thinly sliced and cut to reasonably bite-size bits
2 blood oranges, Tarocco if you have the choice
half a bunch of flat-leaf parsley, chopped to bite-size bits
extra virgin olive oil

Toss together in a serving bowl.



I added salt, pepper, and balsamic vinegar to mine, because this was a bit sweeter than I really wanted. It worked pretty well. I plan to try lime juice some other time.

This would work just fine with normal oranges, or even grapefruit.

I also made chicken piccata, but I didn't take any pictures, and I think I've already written up before how I do that...
