Another impromptu dinner creation

Mess 'o Dinner ala Chilly

So I'm looking at what we've got laying around the house, and this is what I ended up with.

First, I found some frozen chicken breasts. Throw 'em on the skillet and get 'em cookin'.
Meanwhile, I found a green pepper in the fridge. And an onion. Perfect! Chop 'em up quick and get them going in another pan.
I tried for some minced garlic but um... ripe. Maybe been there too long - sadly, I chucked it out.
So raid the spice cabinet. Dried jalapeno peppers thanks to Penzey's. And some crushed red pepper. And while I'm there, how about a little garlic powder? Not ideal, but it's something at least.

Okay, now something to bind them together... gravy? Sure, why not? Everything's just about cooked up. I drained off any excess liquid from the chicken breasts, cut them up into chunks, and throw them back in the skillet on high to brown 'em up a little bit.

Throw the onion/pepper mixture in with the chicken, dollop about half the jar of gravy in, and start to cook it down. It's looking pretty wet, so I throw in a bit of bread crumbs too. And... cheese? Sure, cheese. Cube up some mozzarella cheese. As the mixture reaches the proper thickness, throw in the cheese and cook it all just long enough to melt the cheese in nicely.

I think this would go really well on rice, but we didn't have any. So - dump it over some toast and enjoy.

And enjoy we did! Everyone in the house really seemed to like this one.
