Eggs in maple syrup from A Taste of Quebec were a wonderfully sweet and tasty part of my brunch. But I'm wondering if I could have used half the maple syrup, as I ended up throwing out a large amount of maple syrup after.

isn't amazing, but is tasty and a fantastic way to use up left-over veggies. The recipe from Vegetarian Cooking Without calls for one pound of veggies and gives a few suggestions. I think I might make this periodically just to clean out those veggies I don't usually use. Today's version was 50% leeks. :-)

This egg/potato/tomato dish in 1000 Classic starts in a frying pan on top of the stove, then is broiled on a medium temperature (which I learned from The Original New York Times Cook Book is 350F), so that both the top and bottoms get cooked properly. Nifty and tasty. Although it would be better with really fresh summery tomatoes.

Last night I cooked scrambled eggs with chanterelles. Although I enjoyed this dish, I don't think it was worth the cost of high-priced chanterelles. However, as the recipe indicated that I could substitute other small wild mushrooms, next time I'll use oyster mushrooms (and cut up the large ones).
