eggs and rice seem to be the ingredients of the moment. i feel like i've been eating a lot of eggs lately - hard boiled eggs, egg and ham sandwiches, tamagoyaki, frittatas, etc.. eggs are cheap and easy to cook --yay for cheapness, because i have no money. this recipe is great because it's versatile and you can throw whatever odds and ends you have into it and it will probably still taste good. ^_^ plus, it's another excuse to use my little cast iron skillet.
though i should probably be careful with my egg intake anyways =P

Ham and asparagus frittata for 2 (or 1 hungry person)

1-2 tablespoons olive oil
1/2 pound fresh asparagus, trimmed and cut into 1 inch pieces
1/2-3/4 cup cubed ham
Handful of spinach
4 eggs
1 tablespoon water
1 teaspoon chopped fresh thyme, rosemary, or basil
salt and pepper
3 tablespoons freshly grated Parmesan cheese
1/2 cup shredded cheddar cheese
Directions:
1. Preheat oven to 325 degrees F (165 degrees C).
2. Heat olive oil in an oven-safe skillet over medium heat. Stir in asparagus, and cook until the asparagus is tender, about 5 minutes. Stir in the ham, and continue cooking another 2-3 minutes. Add the spinach and cook until wilted.
3. In a medium bowl, whisk together eggs, water, herbs, and salt and pepper. Pour into the skillet, and reduce heat to low. Cover, and cook 5 minutes.
4. Transfer the skillet to the preheated oven. Bake 10 to 15 minutes, until eggs are no longer runny. Top the mixture with Parmesan cheese and cheddar cheese. Turn on the broiler, and broil until cheeses are melted and lightly browned.
