Banana Bread

Time: 1 hour

½ cup sugar
1 ½ tsp. baking powder
½ tsp. salt
½ tsp. nutmeg
1 tsp. ground ginger
1 tsp. cinnamon
½ cup chopped walnuts
3 over-ripe bananas, mashed
1 egg replacer
¼ cup vegetable oil (OR 1 stick melted butter and 1 egg, rather than replacer and oil)

1. Preheat oven to 350F.
2. Mix dry ingredients in medium bowl.
3. Mix wet ingredients in blender.
4. Add wet to dry, mix lightly.
5. Pour into oiled loaf pan and bake 45 minutes.
6. Remove from oven, cover with aluminum foil and steam 5 minutes.
