I made way too much food for Saturday's BBQ! At least is was all good, including my latest vegan experiment...
vegan key lime pie
- 1 unbaked 9" vegan pie shell (graham crumb, chocolate, if you're in the mood);
- 16 oz non-dairy cream "cheese" (2 tubs of Tofutti Better than Cream Cheese);
- 1 c cane sugar;
- 1 tsp pure vanilla extract;
- ¼ c lime juice;
- 2 tbsp cornstarch;
- 1 fresh lime;
- 3-5 drops green food colouring (optional).
Preheat oven to 350°F.
Blend all ingredients in food processor until very well mixed. Pour into pie shell.
Bake in centre of oven for 40 min.
Remove pie from oven & cool in fridge for at least 4 hours.
Just before serving, slice 8+ thin rounds of lime & place around the edge of the pie.
Serve alone, or with whipped/frozen topping of your choice.
