The write up described this as "an unusual, lightly spiced biscuit that's a taste sensation with port". I wonder if
lucidite's Boy would like them, though, they've got cheese in them, so maybe not such a hot idea...
stilton & pecan bites
- 225g plain flour;
- ¼ tsp each: cayenne pepper & mustard powder;
- 125g chilled & cubed butter;
- 50g crumbled stilton;
- 75g grated mature cheddar;
- 75g pecans;
- 2 lightly beaten medium eggs;
- coarse salt for sprinkling.
Preheat oven to 180°C.
Line 2 baking trays with baking paper. Sift the flour, cayenne & mustard powder together. Add the butter & rub in until it resembles coarse breadcrumbs.
Add the cheeses. Add 1 beaten egg & mix until it forms a dough. Knead lightly. Wrap in clingfilm, chill for 30 minutes.
Roll out the dough between 2 sheets of clingfilm, to a thickness of ½" & cut into rounds. Transfer to the backing sheets.
Brush with egg & place a pecan on each. Sprinkle lightly with salt. Back for 15-20 minutes. Leave for 10 minutes & then transfer to a wire rack to continue cooling.
