done from memory from a recipe that was originally Chorizo soup
1/2 onion, chopped
2-4 links sausage (or Chorizo) --I like Elgin hot sausage
2 cans tomatoes
1-2 cloves garlic (sliced or chopped finely)
2-3 carrots, peeled and chopped
1 can black beans
1/2 can hominy (or 3/4 can corn)
1 jalapeno or chili powder
(optional extra spices: cumin and paprika
1. saute onions in a little oil, add jalepenos
2. remove sausage from casing, mush into small bits. add to pot, cook , drain grease
3. add garlic, carrots, udrained black beans, undrained tomatoes, drained hominy, chili and any other spices, and enough water to make it soupy.
4. simmer until carrots are cooked.
5. adjust seasoning to taste, serve warm, delicious with corn bread
