Cupcakes!

Never Fails Vegan Cake (or Cupcakes)(I like this one because it uses stuff I usually have on hand)

1 ½ cups AP flour (NOT CAKE OR PASTRY FLOUR)

1/3 cup unsweetened cocoa powder

1 tsp baking soda

½ tsp salt

1 cup sugar

½ cup oil

1 cup water or chilled coffee (I've used coffee crystals in water)

2 tsp vanilla extract (not artificial!!)

2 tablespoons cider vinegar

Preheat oven to 375۫۫

Make sure to have an ungreased (I'd use baking parchment) 8-inch square or 9-inch round baking pan on hand. Will also make 12 cupcakes. Make sure to line cupcake tins with paper cupcake liners.

In a NON-REACTIVE (non-metalic) bowl,  sift together dry ingedients. Stir in oil, water or coffee, and vanilla. Add vinegar and stir quickly. There will be swirls where the soda na d vinegar are reacting. Quickly dump into the baking pan or evenly distribute into cupcake liners. Bake for 25-30 minutes for cake or 20 minutes for cupcakes.

Top with a glaze (I like a fruity glaze), frosting , or just a sprinkle of powdered sugar.



With peppermint creamcheese frosting from Coconut & Lime. Mmmm....
