Meals I've already made since going Low-Carb:
Breakfasts:
* Onion, garlic, and bell pepper omelet with spicy mayo dip (sometimes with cheese substitute)
* Scrambled eggs with homemade sausage
Lunches:
* Tuna Salad
* Chicken Salad
Dinners:
Main Dishes:
* Lemon-garlic-caper salmon
* Mom's Cajun meatloaf
* Asian stir-fry (several varieties)
Side Dishes:
* Sauteed Zucchini, onion, and yellow squash
* Salad with Italian dressing
* Sauteed/fried carrots
Snacks:
* Almonds
* Walnuts
* Carrots
Ideas for future dishes:
* Stuffed Peppers (bell, poblano, maybe even jalapeño)
* Things with mushrooms - in omelet, stir-fry, possibly stuffed
* Something Mexican, with shredded beef?
* Deviled Eggs (I've made these in the past - just not while on the diet)
* Things with cabbage - stuffed cabbage, coleslaw, sauteed cabbage
* Soups - chicken, vegetable, tofu, beef
* Beef stew
* More with canned tuna - low carb casserole?
* More things with nuts

It's been a long time since I've been on a low carb diet in a serious way - now it's low carb, low salt, and kosher. It's definitely trickier coming up with tasty recipes, but I seem to be doing pretty good so far.
