2 cups shelled peas (fresh or frozen)
2 cup shredded lettuce
1 ½ cups chicken broth
1/3 cup water
¼ cup tomato juice
1/c cup chopped green onions
1 T. minced parsley
½ t salt
¼ t. white pepper
¼ t. whole thyme
½ cup whipping cream (to reduce calories, you can use low-fat milk here)
Combine the first ten ingredients in a saucepan. Bring to a boil, lower heat, cover, and simmer for 20 minutes. Remove from heat and cool slightly.
Pour the cooled pea soup into a blender (Cuisinart or stick blender works just as well) and process until smooth. Stir in whipping cream, cover, and chill thoroughly. Yield 4 ½ cups.
