lakshmi_amman gave me this tea cookbook. It's got very tempting photographs of each item, but I've never made anything from it before.
I picked Welsh Cakes for part of Christmas morning breakfast. They're really simple.
Sift self-rising flour (I made my own -- just add some baking powder & salt to A.P. flour) and combine with equal parts of cold butter (the recipe calls for margarine, but I couldn't) and shortening until it looks like coarse crumbs. Add sugar and currants. Then it got a little tricky because you were supposed to add an egg, but I had halved the recipe. I added about half the egg, but it looked dry, so I added a little more and none of the optional milk.
Roll out the dough and cut out circles. I got about 11.
Then the fun part. Instead of baking them, cook in a greased skillet until browned on each side. Sprinkle with sugar (I didn't) and serve. We had ours with brandy butter and fruit compote.
Verdict: Good. Like a cross between a scone and a pancake. I'd make these again.
99/116 (I got another cookbook for Christmas). I want to check off one more before the end of the year. Totally doable! Right?
