Woo. Bryan brought my To-Go Ware over (his mom bought it for me as a gift!) on friday, so I've been waiting all weekend to use it for work-lunches. I couldn't wait any longer, so I made my lunch for tomorrow this evening!



I really like how it looks! The size of the set is a little smaller than what I was visualizing (that is good though, I was afraid it would be too big). It seems like the layers are held together pretty tightly so I shouldn't have leaking-type issues.

The bottom layer (lower left corner) has a salad with red leaf lettuce and romaine lettuce, carrot, broccoli, cucumber, black olives, parsley and feta cheese. Tomorrow maybe I'll add some salsa before I leave.

The middle layer (top) has more lettuce under everything, a hard boiled eggs, homemade guacamole, cucumber, broccoli and mushrooms, a little bit of parsley and a few "poor man's almonds" aka apricot kernels.

The top layer (lower right) has homemade organic sugar-free applesauce with strawberries, blackberries, blueberries, kiwi, a blood orange and more parsley!

I also have some homemade, what was supposed to be ciabatta bread, but instead is just tasty crusty, whole grain bread for the side (I hadn't baked it by the time I made this lunch).

**So, what I learned from this first lunch was not to pack so much salad. I was extremely full after trying to eat it all and the food touched the bottom of the upper layer. Oops.
