Once upon a time I had a side of red beans and rice at a restaurant. It was non-vegetarian, but it was still tasty so I decided to make it at home since the meat parts were not my favorite. Using
this recipe with my own modifications I don't know how authentic the resulting dish tastes, but it is delicious. Part of what I like about it is that it tastes incredibly good as a leftover. I don't follow the recipe exactly (I never use Bay leaves because I don't have them) and I sometimes add textured vegetable protein, okra and corn along with some extra paprika and cayenne pepper. When I get around to it, I sometimes make cornbread on the side. I also use brown rice and dump it into the pot and cook it with everything else. I also don't measure anything. I would highly recommend this recipe if you have any interest in ever eating red beans and rice at home.
