So this year, we are staying home for Thanksgiving.
Jeremy will be taking his test to get his 63 Securities lisence Monday and needs the time the weekend will afford him to study. That, and we really can't afford to take a trip anywhere right now (the cheap gas is $3.05/gallon!) This means that I am making Thanksgiving Dinner all by myself this year! I'm not too worried. I've done this before, and it turned out pretty well. The only problem is that there is going to be way too much food, (Jeremy got a 12 lb turkey and a ham) and I haven't really found people who don't have anywhere to go this year to come eat it. Maybe I should go to Target, etc that afternoon and see if any of the panhandlers want to come. :) (Somehow I don't think that's going to go over too well w/ my hubby)
Yesterday I got the pumpkin roll made and in the freezer. Today I'm going to make a pumpkin pie (trying homemade crust even), maybe a cheesecake the mashed potatoes, potato rolls, parboil the sweet potatoes, and get the turkey in some brine (hopefully it will thaw out. It's been in there since yesterday morning and still feels pretty solid) I know you're not supposed to let it thaw out of the fridge, but I may have no choice here.
Tomorrow I will be cooking the turkey, the honey ham, the sweet potatoes, making stuffing, cooking the corn on the cob and baking the frozen pear pie Marcia gave me. The pumpkin roll and pecan will need to thaw too.
Somehow, I'm going to get the kitchen all the way clean and the frontroom decluttered too. Let's not forget kids either.
Am I trying to do too much?
