Now that I've been in CT for more than five days, I decided to get back into my kitchen. The other day I somehow spent only $60 on groceries (did my mom's shopping list and calculator method), and threw down with pots and pans.
After lusting over IHOP's corn cake pancakes (which they criminally make you pay extra for), I decided I could make them myself. So I bought corn meal and got to the skillet. The first batch were pretty good, a half-and-half mix of corn meal and whole wheat flour. And Sunday's batch I did 3/4 corn meal and 1/4 flour. It's like cornbread in pancake form. Sooooo good. I even bought some butter - I couldn't eat these with vegetable oil spread, just couldn't.
I also made some Thai chicken in the slow cooker, with a simple sauce made of salsa, peanut butter, lime juice and ginger. That'll be this week's dinner, with some jasmine rice on the side and a salad.

Five Guys Burgers, we all know this. But I can't eat there every day. So at home I make turkey burgers the same way, double-patty burgers with patties I flatten on the pan. Yum.
With all this eating, I've been getting my butt into the gym a lot still. Pretty sore today after moving up from 25-pound free weights to the 35's. Ouch. May take today off, then back tomorrow. I've got to keep up with Rosemary, now.
