I´m going Indian with my pancakes. About four tablespoons of chickpea flour, one egg, and some milk make two good pancakes for me in my medium/small skillet for me when I´m quite hungry.

For spices, I´m using the Garam Masala that the local pakistani store offers, add some cumin and black onion seeds. Fresh ground pepper and a little salt. Turmeric is cool, too. Extra curry powder if you like it.

For the frying part, I´m using coconut oil. Pour the dough into the skillet, turn it over when one side is done. Add the tomatoes or bell peppers, or other veggies (zucchini tend to get soggy, not good unless eaten immediately) on one half, cover with cheese of your choice, flap the other half over.

Let it cool, then cut into pretty triangles. Pack up in your tupperware for the next day. Do not eat in the presence of your coworkers, as everyone will be curious and ask for a bite and then ask for more.

You can also make it a bit more filling if you add slices of hard boiled eggs in the veggie-cheese layer.

For the dough, you could experiment with yogurt replacing the milk.

Another thing I like: you can prepare your own pancake mix. Just mix all the dry elements, flour and spices, in large quantities and keep it at hand. Saves quite some time of fiddling around with a million spice jars when it comes to cooking.
