How to make cheese, for your viewing pleasure

First, boil a gallon of whole milk.




Then, add lemon juice until the fat separates.




This is what it should look like:




Pour it into a colander covered by a cheesecloth or pillowcase.  Squeeze all the water out of it by tying up the cloth and putting something heavy on top of it.




After the cheese is mostly dryish, press it into a shallow pan and cut into cubes.  Refrigerate.




Fry in 1/4 cup of ghee for some delicious paneer.
