Bento lunch day 3

Aug 30, 2010 13:37

Chicken cheddar biscuits, whole wheat blueberry mini muffins (I just used the chocolate chip recipe and used over a cup of blueberries instead), chopped mini cucumber, strawberries and fresh pineapple and grapes. Husband got one too with more of everything.

Notes: This went together quickly with almost everything prepped before hand. All I did was wash and cut strawberries and mini cucumbers and assemble. I found it much easier this morning. The muffins and biscuits were made Saturday and frozen. I almost forgot to take out the biscuits last night & put them in the fridge to thaw. I wrapped my daughter's and separated my son's mini muffins because the biscuits had a very strong flavor/odor. They are made with deli sliced rotisserie spiced chicken and have lots of flavor. I would have made these with cornbread but my daughter doesn't like cornbread so I used Bisquick instead. I'll try my normal biscuit recipe next time with 1/2 whole wheat

(Reactions posted here later today).

Here's more pictures from this morning:

This is the strap I sewed for my son's lunch box. We didn't get a band for this when we bought it because I forgot we needed one. I also don't think he could handle some of the stretchy or rubber band type because he has weak fine motor control in his hands. I used a piece of fabric left over from making his music class tote, interfaced it and turned it into a tube, tucked the ends in, positioned it on the box and sewed hook and loop tape to it. I used the kind that has both hooks and loops on both sides so it's soft on both ends, it's my favorite type.

It all fits great in this large lunchbox by Embark that we got from Target (Embark is a Target brand). It has a handle on top and a small extra one on the side. I think it's really for 6 packs but it fits his lunch perfectly. The pocket in the front holds his napkin.

This is my daughter's more traditional soft-sided upright lunchbox. It's her same one from last year by Igloo. This has proven to be one of the most sturdiest I've ever bought and she said I didn't have to buy her a new one. Since it's situated upright it will not fit her new bento box, which is 6.5 inches square, that we just bought yesterday.

Now I need to try to hurry & sew up a bag tonight! And I'm feeling anemic and not so great. I really hope to get back to quilting soon but life is kicking my butt.
