Lemon Cloud Tea Cookies

Lemon Cloud Tea Cookies - adapted from Joy The Baker Blog

Makes 48 tiny cookies/ preparation 15 mins/ cooking 20 mins
Ingredients
1 1/2 cups all-purpose flour
3/4 cup cornstarch
4 tsp baking powder
1/8 tbsp salt
8 tbsp unsalted butter, softened
1 cup caster sugar
2 large eggs
1 tsp vanilla essence
1/2 tsp lemon or orange extract
1 tsp finely grated lemon or orange zest

Method
1. Preheat oven to 325 degrees F. (around 170 C)

2. Combine the flour, cornstarch, baking powder and salt. Set aside.

3. Combine the butter and confectioners’ sugar in the bowl of an electric mixer. Beat on low speed with the paddle until well mixed. Increase the speed to medium and continue beating until light, about 2 minutes.

4. Beat in the eggs one at a time. Batter may look broken and curdled. Beat in the extracts and zest.

5. Decrease the speed to low and beat in the flour. Remove the bowl from the mixer and give the dough a few good turns with your spatula to bring it all together.

6. Arrange rounded teaspoons of the dough on a pan lined with parchment paper. Space the balls about 2-inches apart.

7. After all the cookies have been placed on the pan, flour a fork and press a crisscross design into the top of each mound of dough. Bake the cookies until they spread and become golden, about 20 minutes. Slide the parchment paper off the pan to cool completely.

I saw this first on Zoe's blog which brought me to another blog....so decided to try it...only challenge was how long I was going to take to bake these due to the small oven I have......

Receipe says it makes about 48 cookies...but my oven can only take that much each time...so this was batch 1....will prob take me the whole night coz I only started to bake this batch about nearly 6pm...well the good thing that it tasted really good....let my PIL try...MIL loved it...me too coz it was very light & tasty and had a nice lemon after taste.....YEAH!..well I didnt do the criss cross on the batter as my fork got stuck to it a few times so what the heck!!...didnt make much difference anyway



And then miracle happened.....my MIL reminded my FIL about the supposedly non-working oven....then after some fiddling..it was WORKING!!!!!!...they havent used it since they moved here more than a decade ago...well no one baked then and they also thought it was spoilt...but it was my saviour for today's session...coz I can bake even more each time...and I am not restricted to the size of baking trays anymore...and I can bake & cook more things like more cakes/tarts/pies & lagsne for my hubby...

So it all started...




Batch 2....Yeah!!!....



I finished off another batch and I was done!! How much quicker was that? I am so excited, pleased & relieved that the big oven is finally working!!!!Overall I made enough for family, some for Zoe (yup...you get to have some of my version :)) and also for my team in the office....

Very very pleased :)...so tired today...need to sleep now...going to the city to yum cha tomorrow....
