Kenny Rogers Corn Muffins

Serves/Makes: 12 (I made 18)

Ingredients:
1/2 cup butter (about 113 grams)
2/3 cup sugar
1/4 cup honey
2 eggs
1/2 teaspoon salt
1 1/2 cup all-purpose flour
3/4 cup yellow cornmeal (I used polenta)
1/2 teaspoon baking powder
1/2 cup milk
3/4 cup frozen yellow corn (I used about 425 grams of canned corn kernels)

Directions:
Preheat oven to 200 degrees

Cream together butter, sugar, honey, eggs and salt in a large bowl.

Add flour, cornmeal and baking powder and blend thoroughly. Add milk while mixing.

Add corn to mixture and combine by hand until corn is worked in.

Grease a 12-cup muffin pan and fill each cup with batter.

Bake for 20-25 minutes or until muffins begin to turn brown on top.

Decided to give this receipe a try as I miss the corn muffins...a good mate gave me the link for this receipe...

I cannot find cornmeal so I used polenta instead as it was easily found at the local supermarkets here.....

My preparation of ingredients that took me awhile....very yellow-ish hor...hahhaa...



I was supposed to add milk while mixing the flour, cornmeal & baking powder...but it was after mixing in the corn that I realised that the milk was still sitting there...cannot believe I missed it...so I quickly poured it in & used the mixer to mix it in....lucky it didnt spoil the taste at all...

In the process of baking....I used my newly bought 12-cup muffin pan + other 6-cup muffin pan as there were more batter than expected..



The final product :) - the corn smell was so strong but the taste was exactly like how it was at Kenny Rogers back home...my in laws have never had these before as there is no Kenny Rogers in HK...so it was something new and they liked it....Success!!...my MIL requested me to bake some next time for her friends at their opera session...
