Following is the recipe of white sauce:
Ingredients:
- 1 teaspoon refined flour (Maida)
- 1 teaspoon butter
- 1 cup milk
- salt, pepper and sugar to taste
Procedure:
- Take a heavy bottomed pan (So that you can afford not to stir the sauce continuously :D) and sauté the flour in the butter.
- Once its done, slowly pour the milk in the pan, stirring continuously to avoid lump formation**.
- Add salt, sugar and pepper (freshly grounded preferred but not essential).
- Add some grated cheese to the sauce after it has boiled for sometime.
- Taste to check if the sauce is cooked and tastes as per your preferences...(I prefer to add more sugar...it tastes great!)
- The white sauce is ready.
To this sauce you could add any of the following stuff or any other combinations as per your preferences
- Capsicum, onion and sweet corn (sauté slightly in butter and add salt before adding it to the sauce)
- Macaroni (boil in salt water and strain the water before adding a little oil so that they don't stick to each other)
- Diced carrots, cauliflower, peas, french beans (all of them blanched and sautéed in butter), papaya, capsicum
If you have an oven and you are really in for an elaborate meal, you could bake the mixture of sauce and veggies or macaroni in a tin and topped with grated cheese :-)
The good news is that the above recipe forms a complete meal if you add macaroni. You won't need chappatis, bread or rice with it!
** Don't worry, lumps will still form...The way out is to strain the sauce through a strainer after its done completely. You can add veggies and macaroni after this.
