Meat saucebroth or water
whatever canned/fresh/frozen veggies you have on hand. (I had tomatoes, carrots, spinach)
Splash of red wine (optional)
Salt and pepper other herbs/spices to taste
If you have veggies that might take a while to cook, cut into small pieces and cook in some broth until about done. This keeps nutrients in the soup as opposed to cooking it separately. Add the other veggies, red wine, and some meat sauce, and simmer for a few minutes until heated through.
Mmm...5 minute meal... And since I made the meat sauce from scratch (except for the tomato puree/paste), I control what's in it, thus it can be pretty healthy.
