Yep.

What would you do with that "sate"?
さて is a meaningless interjection, often used with "which would you choose?" questions. (It's also used in business letters when moving from rote greetings to the actual topic of the letter.) There's not really any direct correlation in English; I usually just ignore it.

And, yes, I find his refusal to bow to the terms of the question charming.
