Condiments are healthy...

... or at least they are if you eat them in the way that they are supposed to be eaten- without all the chemicals and preservatives and processing that goes on when you buy commercial condiments.
We're condiment freaks in our house, I'll admit it. Mayonnaise and ketchup are two staples in our house. Two not so cheap and not so healthy staples either.
I'd tried making my own mayo and ketchup, but lacking preservatives, they just ended up spoiling right away...

I posted before about lacto-fermentation and its healthy pro-biotic benefits. Then, doing a little googling, I got great recipes for lacto-fermented mayo and lacto-fermented ketchup. I know I already mentioned that, but now that its about a week later, I have to say that the stuff tastes great and is still as fresh as ever! I'm very psyched about this.

The mayo is basically egg whipped till flully, added lemon juice, salt, and mustard, and then added a lot of oil (you can use healthy kinds or whatever is cheapest) in a slow stream until it thickens up. When its the right thickness, you add some pro-biotic whey (made from kefir or yogurt with live, active cultures) and mix. You let it sit out for a few hours then refrigerate it. It tastes great and its awesome knowing that its healthier than the store bought stuff, and loads cheaper too!

Ketchup- I bought seconds of tomatoes in the store. Diced them, blended them, then cooked them until I had a paste. Added some sugar (you're supposed to add maple syrup), worchesterchire sauce, garlic, salt, cayenne pepper, cloves, allspice and whey, and let it sit out for a few days, and then refrigerate it for long term storage. Also tastes like the store bought, but just loads healthier!

I packed my husband's lunch for tomorrow packed with homemade healthy mayo and ketchup.
