How To Fool Yourself Into Thinking You're Breaking Your Diet

I got the best snack idea from my friend Alissa (the first-year teacher). This is so good, I hesitate to call it "diet" or "lowfat" because I know how people are. If I call it that, you won't want to try the recipe because you'll think it tastes diet. In fact, it sounds like it wouldn't be too convincing, but it's so good, I fooled the kids into thinking they were actually ice cream bars.

You take a box of chocolate graham crackers (don't break them apart) and put them on a wax-paper-lined cookie sheet. Then you slather Cool Whip Free on them about an inch thick. Top with another graham cracker and freeze for at least an hour. It tastes *just* like an ice cream bar. You kind of have to eat them fast, because when they melt, you can tell they're cool whip (which isn't a bad thing, really.) But frozen, it might as well be ice cream.

If you use cinnamon grahams like I did (because, apparently, nobody in Spencer eats chocolate grahams,) it tastes like fried ice cream from the Mexican place. Zomg, so good! This is far better than any other so-called "diet" dessert recipe I've tried. Some of them are just gross (like the ricotta cheese chocolate Atkins Diet mousse? *gag*)
