Okay, I know that a lot of people out there hate Rachel Ray, with her EVOO and her Yum-o, and her bazillion other catch-phrases. She's so damn perky and cute, and she's not even a chef and blah, blah, blah...
Whatever.
I think she's awesome. I don't watch her cooking show regularly, because...well... if it's not on Noggin, I usually don't get to see it. But I did try a few of her recipes from the website, liked them, then got a subscription to the magazine
Everyday With Rachel Ray. I gotta be honest, I really love the recipes. They're all pretty simple (even some of the more complicated ones) and all use healthy ingredients, heavy on the fresh produce and meats whenever possible.
Yesterday I fixed her Carbonara Pizza from the most recent magazine, and it was amazing. This is how amazing it was -- I forgot to put the rack down a notch, so it wasn't in teh center of the stove. I accidentally burned the edges of the pizza. Everyone just ate the good stuff in the middle and tossed the burnt crust in the can. Here's the recipe if you're interested:

Today I worked up some yummy garlicky oregano paste for some Pernil (Mexican pork roast) and just the smell of the marinade made me hungry. It has to sit until tomorrow before I cook it, so everytime I open the fridge and get a blast of the scent, it makes me want to go ahead and cook it so I can eat it. Instead, I'm going to try a recipe for coconut shrimp.
Anyway, I don't get why people can't stand her, unless they're just put off by the fact that she's just so amazingly cute and likes to showcase recipes that are easy and fun, but not fussy. I have a place in my heart for gourmet cooking, of course, but I'm not a food snob. I have to cook meals for my family every day, so easy = good. I'm pretty impressed by the magazine, at least. Not a huge fan of the talk show, but I don't like talk shows that much, anyway.
If the shrimp turns out well, I'll post the recipe on my
recipe blog so I can find it again later. I bet it will, though. Everything I've tried from that magazine has been dead-simple and a hit with the family.
